Try the Kobe beef burger, it's truly delicious. Great view of the dolphin lagoon while you eat. Can get really pricey really fast if you aren't careful.

Lagoon Grill is located right next to the dolphin lagoon and lagoon tower in the massive Hilton Waikoloa Village resort so you get a great show of the dolphins during your meal (regardless of the dolphins actually performing or not). The seating is all outside though fairly well shaded.
Kids will enjoy the dolphin watching, the kids menu which has surprisingly good chicken tenders, and the colored wrist band you get when ordering a kids meal. All of the Hilton Waikoloa Village restaurants have a different colored rubber wristband to collect and when you collect them all you get a free scoop of ice cream. The kids will love the idea and want to collect all of them. If you collect six you get a free scoop of ice cream, collect the seventh (requires a pricey Luau) and you get a free picture with a parrot. It's all a pretty sick joke designed to force parents to spend a zillion dollars to obtain a cheap "free gift".
They serve up fairly basic foods with burgers being the big item and I was actually shocked at how good the burger was. I ordered the Kobe beef burger and it was unbelievably good (and pricey at around $20) and perfectly cooked. The regular (non-Kobe beef) burgers are pretty good as well but just nowhere near as good as the Kobe version and also a bit pricey at $15 or so. If you eat here and want a burger, spring for the Kobe version. The fries are good here but we really enjoyed their onion rings.
You also have access to a full bar here so there are plenty of tasty and touristy drinks to be had, for a price. To be fair, they seemed to contain a fair amount of alcohol in them at least! The food here came out faster than seemed possible though our waitress was quite slow at checking on us, bringing the bill, and so on.
Overall, it's a decent place to eat if you don't want to leave the Hilton Waikoloa Village property but can easily cost you over $100.00 for two adults (with an alcoholic drink each) and two children.
